Tamari versus Soy Sauce

Why tamari instead of soy sauce? To me the taste difference is indistinguishable, but tamari has just three simple ingredients—water, soybeans, and salt—while soy sauce usually includes a long list of obscure chemicals. I made the switch in 2009 when CNN reported that manufacturers in China were using human hair, collected from barbershops and salons, as an ingredient in soy sauce. One of the most common tamari brands, San-J, brews its tamari in the United States and Japan; both countries have a good record on food contamination and counterfeiting.
